Street food. Fine dining. All VINA.
The concept? Downstairs, it’s business as usual: authentic Vietnamese cuisine. Upstairs, behind a curtain, they’re experimenting. A maximum of 20 guests can experience how traditional dishes are transformed into surprising fine-dining creations.
The menu features dishes such as whelks with satay chilli sauce and lemongrass, or Cơm tấm, the famous broken rice from Saigon served with pork ribs and egg. Choose either à la carte or a six-course set menu.
And then there’s Thi Ba Nguyen, Robert’s 85-year-old mother, who continues to work in the kitchen and is considered the world’s oldest award-winning chef. So the culinary tradition is quite clearly a family affair.
VINA Fine Dine is open from Thursday to Saturday from 6 pm.
Three toques for Vietnamese street food. Who would have thought that sometimes there’s just a curtain separating street food from fine dining?
