More Than Just Schnitzel

Sometimes typically German fare is just the best. Especially when it’s a combination of classic Swabian cuisine with international influences
We’ve found just that. In Tübingen. At Restaurant 1821.

1821: Europe settles into the post-Napoleonic order. German literature revels in late Romanticism. And in Tübingen, a group of local intellectuals establishes the Museumsgesellschaft, still one of the most important pillars of culture in Tübingen today – and since 2022, home to a restaurant that would fit in well in any big city. Its name: 1821, “the magic number for Schwäbisch food”, as the owners, brothers Marcel and Pascal Jehle, confidently say. With culinary highlights from the Swabian province as a trendsetting specialty. Kässpätzle Royal, for example, refined with truffles.

And before moving on to the onion roast beef in Lemberger sauce or homemade Maultaschen served with “Grandma Charlotte’s potato salad”, the starter is a wonderful way to discover how well a lentil salad can harmonize with goat’s cheese ice cream, pumpkin jam and tuna tartare. Vegans will be delighted by the braised pointed cabbage with miso, among other things. And because the Swabian people are extremely cosmopolitan, despite the many preconceptions to the contrary, the red Thai curry, oyster mushroom risotto and original Berlin currywurst also go wonderfully with this culinary crossover.
The 1821 is “the magic number for Swabian food”, as owners Marcel and Pascal Jehle say about their restaurant. Swabian at heart, yes. But at home in the world.

That goes down well in this city of 90,000 inhabitants and 28,000 university students. At any rate, Marcel and Pascal Jehle quickly felt at home here. “On the one hand, the city is exceedingly Swabian in its traditions, but on the other hand, there’s a really young, cosmopolitan vibe here,” is how the two Esslingen natives describe their first impression. And this is exactly what their restaurant reflects. Totally sustainable, too, on the menu and otherwise. The brothers are proud of their six trainees.

A feast for the palate and for the eyes that starts with the timelessly modern interior design and continues on long past the cocktail hour.

The conversion was planned in detail together with the Museum Society, with a special focus on the service staff’s routes between the dining room and the kitchen and the living room atmosphere for the guests, who are quite welcome to stay a little longer even after they’ve finished their meal. “We want people to have an experience here with us,” the Jehles say. And that’s certainly what the guests can expect, at the latest when they get to the cocktail menu featuring many in-house creations alongside the typical classics. With that in mind, a gin having a tasty rendezvous with some Earl Grey tea shouldn’t really come as a surprise.
